PUMPKIN SEED RECIPES!
I loooove pumpkin seeds. What I love even more is carving pumpkins and making my own pumpkin seeds. I'm excited to try these new varieties that I found on A Subtle Revelry.

FOODIE FRIDAY: ZUCCHINI BOATS
I've made a variation of this recipe before and it turned out GREAT. Just cut a zucchini in half lengthwise and trim a little off the bottom so it will sit still in a baking dish. Scoop out the center where the seeds are with a spoon. Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper. Arrange halved grape tomatoes into the grooves, sprinkle with bread crumbs and bake in a 350 degree oven for about 30 minutes. Remove and place diced fontina or mozzarella in between the tomatoes, place them back in, but now under the broiler til golden and bubbling. Remove and drizzle with olive oil and a sprinkling of grated parmesan.
Credit to the Proud Italian Cook for the recipe and photo.

FOODIE FRIDAY: AVOCADO TOAST
I am one of many who loves avocados! So avocado toast is one of my favorite breakfasts..snacks..actually it's great anytime of the day. And the best part about avocado toast is that it is so simple to whip together..
1. scoop avocado out of skin into bowl
2.sprinkle salt ( I prefer sea salt), pepper and a spritz of lime onto the avocado.
3. mash with a fork to your desired texture (love mine chunky!)
4. toast your bread to how you like it
5. then spread that avocado goodness onto the bread-don't hesistate to put on a ton as the avocado is the best part!
bon appetite
